Stuffed chicken breast is a good option for a quick and healthy homemade dinner, with some added sides. It’s so versatile because of the numerable ingredients you can stuff in the chicken breast. Roasted stuffed chicken is healthier than the fried stuffed chicken because it has less calories; chicken breast comes with no skin and less fat. Frying chicken means adding more calories to it, while roasted stuffed chicken extracts the oil reducing the calories. However, you can choose to cook your stuffed chicken either way, you’re sure to get the same delicious taste.

Chicken breast, fresh spinach and basil leaves, sundried tomatoes, mozzarella cheese, grounded pepper, dried oregano or mixed herbs, extra virgin olive oil (the olive oil from the sundried tomatoes can be used instead) and a pinch of salt. You can sub mozzarella cheese for goat’s cheese or other types of cheese.

There isn’t much to prepare with roasted stuffed chicken. All you have to do is to chop the sundried tomatoes, fresh basil and spinach. The fresh mozzarella cheese can also be sliced so it can be stuffed easily.

PS: Keep the olive oil fresh from the sundried tomatoes.

You can stuff chicken breast with vegetables and other ingredients, such as spinach, basil, asparagus, mushrooms, goat’s cheese, mustard, garlic and other herbs as desirable.

Ingredients

  • 4 Chicken breast

  • 5-7 Spinach

  • 4 Basil leaves

  • 1-2 Sundried tomatoes

  • 4-5 thin slices Mozzarella cheese

  • 1 teaspoon Oregano and ground pepper flakes

  • Pinch of salt

  • 1 teaspoon Extra virgin olive oil (use olive oil from th sundried tomatoes

Directions

  • Place chicken breast on a chopping board and create a pocket by making an incision with a sharp knife. Try not to cut through so the stuffing doesn’t escape from the bottom.
  • Season the chicken breast with oregano/mixed herbs, ground pepper and a pinch of salt.Stuffed chicken breast
  • Stuff the chicken breast with mozzarella cheese followed by the chopped spinach, basil, sundried tomatoes and top with cheese again.Stuffed chicken breast
  • Seal the chicken breast together with a couple of toothpicks.
  • Place the stuffed chicken breasts in a baking tray and season with olive oil (from the sundried tomatoes).
