Smashed egg and avocado toast are great sources of inexpensive protein; this combo makes a perfect healthy breakfast idea!

Egg and avocado is a popular combo, fried, scrambled or grated, you can never go wrong with this super tasty breakfast. Healthy proteins reduce the need for late night snacking and eating food rich in protein can reduce muscle loss as well. Smashed egg and avocado toast is one of my favourite post workout meals, I will normally have two portions of it and I am good until lunch time. This delicious breakfast also helps keep your metabolism rate higher which promotes body fat loss.

Ingredients in this recipe

2 free range eggs, ¼ cup of crumbled cheese (optional), 1 ripe avocado, ½ cup of fresh cherry tomatoes, 1 teaspoon lime juice, ½ teaspoon of ground peppercorn and 2 slices of sourdough bread or any other. The eggs can be grated, smashed or diced into small chunks. Lime can be subbed for lemon and cumin can also be added to the avocado mash to give it more flavour.

Preparation

Being a simple breakfast, there isn’t much prep to do as such. Boil the eggs and let it cool in cold water before peeling; it takes about 12mins to perfectly boil an egg. Peel the avocado skin off and in a small bowl, smash it with a fork, and sprinkle some lime juice on it (add cumin for more flavour). Stir well till it’s well combined (do this just before toasting the bread to keep it fresher). You can season with a bit of salt and ground pepper to make it tastier. You can use any type of cherry tomatoes, quarter them and set aside.

How to make smashed egg and avocado toast

This nutritious and inexpensive breakfast is quite easy and quick to make saving you time to do other things. Once the ingredients are prepared, it’s just a matter of spreading them on the toast.

  1. Toast two sourdough bread.
  2. While the bread is toasting, smash or grate the boiled eggs.
  3. Evenly spread the avocado mixture over the toasted bread and top it with the smashed eggs and cherry tomatoes. Season with a pinch of salt and ground peppercorn. Enjoy!
