Cucumber and cherry tomato salad is very tasty, rich in flavour and will be ready to eat in just 15mins! The Italian seasoning that goes with this healthy salad is the secret to the abundance of flavour it has. Once the veggies are chopped, you just toss the rich Italian seasoning in.
Even though this salad is very healthy, it lacks protein to make a balanced diet. Cucumber and tomato salad can be served with chicken or as sides with other dishes.
Ingredients
1 cucumber, 1 pack of cherry tomatoes, 1 medium size red onion, 75mls of avocado oil, 2 garlic cloves, ½ teaspoon of grounded pepper flakes, fresh chives (optional), 1 teaspoon balsamic vinegar, ½ teaspoon of salt, 1 fresh lemon and 1 tablespoon of Italian seasoning.
Ingredient substitutes
If you don’t have all the ingredients for the Italian seasoning, you can sub them for other alternatives, and you will still get the same crunchiness and flavours. Sub Avocado oil for extra virgin olive oil or grapeseed oil, balsamic vinegar with white or red wine vinegarand and Italian season with pizza seasoning.
Preparation
Seasoning: The Italian seasoning for this healthy salad is easy to make with a few ingredients. Pour 75mls or ½ cup of extra virgin olive oil into a small bowl, add 1 teaspoon of balsamic vinegar, 2 crushed garlic cloves, 1 tablespoon of Italian seasoning, chopped chives, and ½ teaspoon of salt and pepper.
Mix all together with a teaspoon and set aside. It important to make this seasoning first before chopping your veggies. This will make all the flavours blend together before using.
Cucumber, cherry tomatoes and onions: 1 medium size cucumber, a pack of cherry tomatoes and 1 medium size red onion will make 4 serves. You can reduce the amount used to fit the number of serves. Chop the cucumber and red onion into rounds slices and halve them. The cherry tomatoes can also be halved, and you don’t have to deseed or peel before using.

What type of tomatoes can be used for Cucumber and cherry tomatoes salad?
I used small cherry tomatoes for this recipe, but you can also use ripe vine tomatoes and still get the same result. If you’re using bigger tomatoes, it is better to deseed them to remove the extra juice before using.
