This caprese salad is made with fresh vine tomatoes and mozzarella cheese, ground peppercorn, salt and dressed with extra virgin olive oil.

I was just making garlic butter chicken for dinner, and while it was in the oven I contemplated on a worthy salad for the side. I didn’t fancy a leafy salad, so I thought tomato and mozzarella caprese salad will be a quick fix. Fresh basil leaves and vine tomatoes are available in abundance in the summer, so I always buy more than needed in case I need it. The salad is an Italian classic and it only needs ground peppercorn, salt and olive oil dressing.

The taste of the vine tomatoes is complemented by the mozzarella perfectly; together, with the basil, your taste buds will burst with flavour. This salad can transport you to Italy with one bite, its refreshing and wholesome flavours will reinvigorate you on hot summer days.

4 ripe vine tomatoes, mozzarella cheese, fresh basil leaves, extra virgin olive oil, ½ teaspoon of grounded peppercorn and a pinch of salt. It is better not to complicate this salad, but if you decide to add your own twist, you can add avocado, cucumber or even pasta.

How to make tomato and mozzarella caprese salad

This salad is quite easy to make, all it needs is a little bit of slicing and dressing. I always make mine when the main meal is nearly ready to keep it fresh.

  1. Cut the vine tomatoes and mozzarella cheese into round slices on a chopping board.
  2. Place the tomato and mozzarella slices on each other alternating between the two. Leave a little gap on each for the fresh basil.
  3. Tuck a leaf of fresh basil between, and maybe some on top.
  4. Season the tomato and mozzarella with salt and peppercorn and drizzle some extra virgin olive oil on top.

Ingredients

  • 4 Vine tomatoes

  • 250 grams Mozzarella cheese

  • 1 handful fresh basil leaves

  • 2 tablespoon Extra virgin olive oil

  • ½ teaspoon Ground peppercorn

  • Pinch of salt

Directions

  • Cut the vine tomatoes and mozzarella cheese into round slices on a chopping board.
  • Place the tomato and mozzarella slices on each other alternating between the two. Leave a little gap on each for the fresh basil.
  • Tuck a leaf of fresh basil between, and maybe some on top.
  • Season the tomato and mozzarella with salt and peppercorn and drizzle some extra virgin olive oil on top.
