Simple tofu fritters recipe made with ground tofu, broccoli, eggs and breadcrumbs. Very easy to make and perfect for meat-free fritters
Broccoli tofu fritters is a meat-free replica of Chicken fritters that I made. As I like to experiment with vegetarian version of my recipes, this was no exception and it came out perfect! These fritters are so tasty and full of irresistible aroma, like Nigerian beans fritters (also known as AKA). The broccoli tofu fritters is full of fibre and protein which makes this recipe more nutritious and it can also be made keto-friendly if you sub breadcrumbs for almond flour. Apart from being easy to make, these fritters are perfect with salads, just as an appetizer or as a burger.
Ingredients
Organic tofu, breadcrumbs, broccoli, free range eggs, fresh dill, onion powder/flakes, garlic granules, olive oil, salt and pepper to taste. How to make broccoli tofu fritters
Tofu: Place the tofu block on a chopping board and cut into small chunks. Pour into a food processor and grind. Pulse after 1min or less time to create coarsely ground tofu. Usually when cooking tofu, you would have to get the excess water out, but that is not necessary here as the water helps it grind perfectly. It is important not to over-process the tofu, so it doesn’t turn into a paste.
Broccoli: Separate the florets from the broccoli stem by carefully cutting with a knife. Steam the broccoli for 5-7mins and let it cool. Cut into small pieces and set aside.
Combine ingredients: Using a large mixing bowl, pour in the ground tofu, breadcrumbs, broccoli, eggs, dill, garlic granules, salt and pepper. Mix with a spatula until the ingredients are well combined.
Build fritters: Make patties of about ½ inch thick (this will be about 1/3 cup) and rub oil on your palm after each fritter if it gets sticky.
Cook: Place a non-stick skillet on the hob over medium heat. Add 3-4 spoons of olive oil and cook the patties for about 3-4mins on both sides. Serve with your favourite dips or salad.
How to preserve broccoli tofu fritters
Store leftover tofu fritters in a lidded plastic container and keep in the coolest part of the fridge for 3-5 days. You can also freeze for 1-3 months, cooked or uncooked.

Can you bake tofu fritters?
You can bake tofu fritters instead of frying. Preheat oven at 190C, Place fritters in a baking tray and bake for 15-20 mins at 200C. Flip halfway to ensure that it is evenly cooked.
