Feta cheese smashed peas and mango chutney toast

This mango chutney, feta cheese and peas on toast is unbelievably yummy!

Upgrade your breakfast toast game with this smashed peas and mango chutney toast recipe. It’s unbelievably tasty that one slice simply won’t be enough. As I continued to explore more healthy and simple breakfast ideas, I was inspired by Shelina’s ‘toastpiration’ made with smashed peas, feta cheese, nigellas seeds and honey. In my own twist, I subbed honey for mango chutney, and it was super tasty. It was my first time using chutney of any kind on toast, and the result means it will not be the last time this breakfast is asked for.

Ingredients in this recipe                                           

Feta cheese has a tangy bitter taste that gives a kick to the teeth, so combining it with a sweet spread like mango chutney or honey on toast makes a perfect combination. In this recipe, I used sourdough bread, green peas, feta cheese, mango chutney, mixed seeds, mint leaves and extra virgin olive oil to add more flavour. You can sub mango chutney for any other chutneys, and honey and jam are another good substitute.

How to make feta cheese, smashed peas and mango chutney toast

  1. Add green peas to boiling water and sprinkle a pinch of salt over it. Cook for 1-2mins. You can also do this step using a microwave: toss green peas in a microwavable bowl add 300mls of water and ¼ teaspoon of salt. Microwave for 4mins on high heat.
  2. Remove peas from the heat and add some cold water or ice cubes to cool it down completely. When the peas are cool, drain the water out and set aside.
  3. Toast the sourdough bread (you can sub for regular toastie bread) and using a knife, spread the mango chutney as the base of the toast. Crumble over some feta cheese followed by the peas.
  4. Top it with some seeds of choice and drizzle some extra virgin olive oil to add more flavour.

Pimp your toast with mango chutney and feta cheese!

Ingredients

  • 2 slices Sourdough bread

  • 20 grams Peas

  • 30 grams Feta cheese

  • Mango Chutney

  • Fresh mint leaves

  • Extra virgin olive oil

  • Seeds (mixed seeds or nigella seeds)
