Delicious garlic chicken and rice recipe

This is a perfect chicken and rice dinner idea made with garlic, chicken breast, cooked rice and veggies. A simple, yet tasty garlic chicken and rice recipe full of flavours and crunchiness.

A little story about how I came about this garlic chicken and rice recipe. It was a day to my weekly shopping day and I had just chicken left in the fridge. As I was wondering what I could make with the chicken, stuffed chicken breast came to mind, but I quickly trashed the idea as I had had it two days before. I checked the fridge again and found that I still had carrots, so I thought I could make something with these. Though the carrot is just one of veggies in this recipe, it was however the decider.

Ingredients in garlic chicken and rice                                    

Chicken breast, garlic cloves, cooked rice, green peas, carrot, paprika, ground peppercorn, Italian seasoning, chives, olive oil and salt to taste. I would say the main ingredients in this recipe are chicken, rice and garlic. For the veggies and seasoning, you can use any of your favourites. I basically just used what I had so feel free to play around with your own twist.

Preparation

Rice: Wash 1 cup of uncooked rice (you can use any type of rice) under cold water, pour the rice into boiling water and cook until it’s nearly done, drain excess water out and set aside. Uncooked rice will normally triple in size once cooked.

Veggies: Peel 1 large carrot with a peeler and dice it. Chop some fresh chives and crush the 4-5 garlic cloves with a garlic press and set all aside.

Chicken: I did this last to keep it fresh before frying. Dice the chicken breast and toss it into a mixing bowl. Season the chicken with 1 teaspoon of paprika, 1 teaspoon of ground peppercorn and ΒΌ teaspoon of salt. Using your hands, mix the chicken with seasoning and set aside.

How to make garlic chicken and rice

  1. Pour 3-4 tablespoons of olive oil in a non-stick saucepan or skillet, place it on the hob and set heat to high. Give it about 1-2mins to heat up before tossing the chicken in. Fry the chicken on both sides for about 3-4 mins each. Reduce the heat to medium and add garlic. Stir together and let it cook for about 3mins.
  2. Add cooked rice, carrot, frozen peas, chives, Italian seasoning and pinch of salt to taste.
  3. Mix together with a spatula until all ingredients are well combined. Cook for 5mins and uncover. Stir half way through to ensure that the heat is well distributed.
  4. Taste to see if more seasoning is needed, if not, serve hot!

Can you freeze garlic chicken and rice?

You can preserve garlic chicken and rice by storing in the coolest part of the fridge or freezer in a lidded container. To serve, let is defrost fully and microwave for 4mins on high heat. If you plan to eat it within a few days, you can store in the coolest part of your fridge and microwave on high heat for 4mins before serving.

This is a simple rice and chicken dinner recipe and it’s very easy to follow. The ingredients list below will be okay for 2 servings. You can use other veggies and seasoning as desired.
